Plunge Fest

The first weekend in February, I participated in Plunge Fest 2012. As most of you know, I participated in Polar Bear Club in 2004. It was a blistery 40 degrees in February that I first jumped into the water.

I did it again  at a seasonable warm 50 degrees and I think my internal heater is failing me! I have never been so cold!

Overall, we raised the most money as a group and we had the most participants and volunteers of any organization. It makes me proud to be a Staff Advisor for the Athens Tech Rotaract Club.

The Infamous Lemon Meringue Pie

For those of you who know my Meme, she is known for her southern desserts. My two favorites: banana pudding and lemon meringue pie.

I've tried to make both for years and can't seem to get it right! I made it a hundred times and it was not as good as my Meme's.

As I was going over the recipe one day with my grandma, she said no wonder you can't get it right...your recipe is wrong.

I had to add the correction in...Thanks P for printing me the wrong recipe!
Lemon Meringue Pie also happens to be Thomas's favorite. I don't think he's ever had Meme's lemon meringue which might be why he likes mine :)

Simple ingredients...also need sugar and a dash of cream of tarter

Use an egg seperator...This is one of a kind!

Mix egg yolks and can of condensed milk together... then slowly add 1/2 cup of lemon juice

Beat the egg whites until they are stiff, then add 6 tablespoons of sugar and a dash of cream of tarter

I don't have a finished product picture...It never turns out pretty when I make it! Maybe one of these days

Here is the recipe...
3 eggs, seperated
1 can condensed milk
1/2 cup lemon juice

For meringue,
egg whites
6 tablespoons sugar
dash of cream of tarter

Mix egg yolks and condensed milk together. Slowly add lemon juice while mixing. Mix until it is REALLY yellow. I put mine in the fridge so it is cold before I put the meringue on

For meringue, mix egg whites until they are stiff (I measure mine by if I can turn them over in the bowl)
Add 6 tablespoons of sugar
then add a dash of cream of tarter ( I like to add 2)

Hopefully, yours will turn out as good as Meme's :)

Elder Covered Bridge

Thomas and I went to the Elder Covered Bridge a couple of months ago. I've always seen pictures of covered bridges but had never been to one. It was so cool! This is one of the few covered bridges that are actually functioning. Here is our trip in pictures!






Reese and Liza had such a good time, Reese lost his collar!

The Elder Covered Bridge is definitely a must see on a trip through Watkinsville!

I'm PINNING!

So, by now, everyone is aware of Pinterest. I'm obsessed with this website. I love browsing the website and trying to find things to make or bake! I have completed a lot of projects from Pinterest...

Here they are:



Amazing mushrooms, I topped them on steak

Wooden letters, mod podged with scrapbook paper and embellished

Easy calzone...pizza dough and sauce add cheese, and then cut and wrapped

I changed this a little bit from the original on Pinterest

I found this recipe on Pinterest, but the girl made her own cake and then dyed it red and then made chocolate ganache...I decided I didn't want to be that overachieving so I made red velvet cake and then layered it with cream cheese frosting and chopped pecans, topping it with coconut.







Now, the greatest mystery to Pinterest, is how to say it...Happy Pinning!
